Since a lobster must be thrown into hot water alive, many are understandably reluctant to prepare lobster in their own kitchen.

Lobsters have long bodies with muscular tails, and live in crevices or burrows on the sea floor. Three of their five pairs of legs have claws, including the first pair, which are usually much larger than the others. Highly prized as seafood, lobsters are economically important, and are often one of the most profitable commodities in coastal areas they populate.
Commercially important species include two species of Homarus (which looks more like the stereotypical lobster) from the northern Atlantic Ocean, and scampi (which looks more like a shrimp, or a "mini lobster") — the Northern Hemisphere genus Nephrops and the Southern Hemisphere genus Metanephrops.

2 Boiled lobsters, approx. 500 g each
1 Untreated lime
2 Passion fruit
Olive oil for the grill
2 tbsp Olive oil
3 tbsp
White rum
100 g
Cold butter
2 Ripe avocados
sea-salt
pepper from the grinder
Preparation steps:
Step Nr. 1:
Detach the lobster claws and snap open the back end. Halve the tails lengthwise. Wash the lime in hot water, dry it and peel off the peel with a vegetable peeler and cut into fine strips. Halve the passion fruit and scrape out the pulp.
Step Nr. 2:
Place the lobster tails, shell side out, on an oiled cooking grate. Add the lobster claws and cook both on the hot grill for 6-8 minutes.
Step Nr. 3:
Heat the olive oil in a pan and briefly sauté the lime peels. Deglaze with the rum and add the passion fruit pulp. Let it simmer a bit, then gradually stir in the cold butter. Halve the avocados, remove the stone, scoop out the flesh and cut into thin slices. Drizzle with some lime juice. Remove the lobster parts from the grill, remove the meat and arrange on plates with the avocados. Sprinkle with sea salt and pepper and drizzle over the passion fruit sauce. Serve garnished with cress if you like.
